Jay Maynard and Billy Haynes Jr. have created a successful formula for farming in the south. Though Chef Larson became acquainted with Blackbird when it was solely operating out of the Flat Rock, NC area, they have since developed a second farm on Wadmalaw Island. In doing so, Blackbird is extending the seasonality of many types of produce by. For example, Blackbird brings Charleston tomatoes from the Appalachian Mountains, when the lowcountry summer gets too hot to grow much of anything. Their Johns Island market showcases the best of both farms, along with wares from other local, artisan producers (Brian Bertolini’s pasta, seaohns Island as they are true ambassadors to all that is regional and tasty.
