Dave is truly committed to sustainable aquaculture, and for this, the team at Wild Olive holds him in high regard. Both his clams and oysters are raised above the fertile pluff mud sea bottom, so the highly oxygenated surface waters can naturally purge the shellfish of any mud or grit, while maintaining their salty liquor.
